From the heart of Tipperary, where the
pastures are rich and moist, come some of Ireland’s finest
cheeses. Here the Maher family run their farm, and since 1986,
with the milk from their Friesian dairy herd they produce some of
Ireland’s best farmhouse cheeses. Quality is the keynote at
Cooleeney, and the herd are kept in a clean and healthy
environment. They enjoy the best pastures and carefully selected
feed which help the ensure milk of the highest quality.

| Ardrahan
Farmhouse Cheese |
| Ardrahan has a
well-rounded earthy smokey flavour, which grows more robust
and tangy as the cheese ages. It owes much of its flavour to
the rustic golden brown washed rind. The cheese is lightly
pressed giving it a semi-firm texture, which softens into a
bulging compact paste. Available in 300g and 1.4kg
rounds. |

| Boilie |
| This is a soft
cream cheese formed into small orbs and presented in glass
jars. The cheeses are submerged in a marinade of sunflower
oil, herbs and a touch of garlic. It is a versatile,
delicately flavoured cheese that can be used in salads and
cooking or simply spread over a piece of warm toast.
Available in 200g and 1kg tubs. |

| Cahills Porter
Flavoured Cheese |
| This is a firm
textured Cheddar type cheese with a tangy and full flavour.
Plain Porter is added to the cheese in a waxed truckle.
Available in 450g and 2.2kg rounds. |

| Carrigaline
Farmhouse Cheese |
| With a lightly
waxed rind, this sweet flavoured cheese is semi-firm yet
delicately textured. As the cheese ages and the texture
dries a little, it remains subtle, yet develops a
fuller flavour as the taste lingers a little longer.
Available in 200g, 400g and 1.75kg rounds. |

Cashel Blue
|
|
Cashel Blue is a true
original with its very own particular sweet and tangy flavour. To
enjoy Cashel at its best it ust be eaten at around four months
old. It is at this age when the paste takes on a rich yellow and
turns buttery. Available in 175g and 350g sections, and 1.5kg
rounds.

Cooleeney Farmhouse
Cheese

Cooleeney cheese is
made in the style of a Camembert, but it is very much its own
cheese, made from a high quality milk from the Cooleeney herd. The
flavour is smooth and robust with tastes of oak and mushrooms. Its
texture when ripe is thick, velvety and melting. Available in 200g
and 1.7kg rounds.

Cooleeney is a
soft mould ripened cheese, with a beautiful creamy texture
and a distinctive aftertaste.
Cooleeney is produced on the
Maher farm in the heart of Tipperary where the pastures are
rich and are surrounded by damp boggy land an environment
which allows the Maher family to produce Cooleeney which,
when mature is creamy and oozing with flavour. |

Gortnamonna Goats
Milk Brie |

Gortnamona is a
soft mould ripened Irish goats cheese. The cheese has a fresh
clean flavour with a creamy texture when mature. The unique
flavours of Gortnamona are attributed to the clean environment
in which the milk is produced.
As goats milk products are
classified as non dairy, Gortnamona is an ideal substitute to
cows milk cheese. It is medium fat and is recommended as part
of a low cholesterol diet. |

Dunbarra |
 |
Dunbarra is a soft
mould ripened cheese, firmer than a Brie yet has a
distinctively creamy texture. Dunbarra is produced on the
Cooleeney farm where all milk used for cheese making is
supplied from our own herd and is of highest quality.
Dunbarra is available in two
varieties, garlic and peppered. The different flavours widen
its versatility in the culinary field. |
