Blue Stilton

At the centre of the Clawson range is traditional Blue Stilton. It is a creamy coloured semi-hard cheese with greenish blue veining radiating from its centre and has a coat which is crusty, slightly wrinkled with a greyish brown hue. Blue Stilton is normally aged to around 8 weeks.

Made in the same way as Blue Stilton, Mature Blue Stilton can be ripened to around 14 weeks, giving it a more mellow flavour.

Blue Stilton and Apricot Brushettas: brush slices of baguette with walnut oil and bake in a hot oven until golden. Spread each slice with some apricot chutney, top with a slice of Blue Stilton and slivers of dried apricot, grill until cheese is bubbling and serve immediately.

Blue Shropshire

Blue Shropshire is a full flavoured un-pressed yellow cheese with distinctive blue veining. A full fat semi-hard cheese with a smooth texture, each Blue Shropshire is made by hand and has an attractive golden russet coat.

Leeks with cream and Blue Shropshire: drizzle a little cream over tender steamed baby leeks and crumble Blue Shropshire over the top. Serve immediately.

White Stilton
White Stilton is made in the same way as Blue Stilton except that no blue mould is added to the milk. It is a young, close-textured cheese with a very mild, fresh flavour - a very different taste to Blue Stilton.

White Stilton and Pesto Salad: toss some cooked pasta in a little olive oil mixed with some pesto. Add some pitted green and black olives and some halved cherry tomatoes. Place in a serving dish and crumble White Stilton over the top.
