Quickes Traditional Cheddar is the
most widely available cheddar matured in a muslin wrapped truckle
still to be made and matured on a single farm. Every cheddar is
hand made by one their nine skilled cheese makers on their farm in
the village of Newton St Cyres in mid Devon, 170 miles south west
of London in England's West Country.

Traditional
Cheddar
|

Quickes Traditional Cheddar has an
intensity and complexity of flavour that comes from the cloth
wrapped truckles that mature on wooden shelves for over a year.
The cheese is allowed to breathe as it matures, forming the old
fashioned rind that is the hallmark of a well-matured traditional
Cheddar. A whole truckle is 27kg or can be cut into different
sizes such as 6kg (quarter), 3kg (eighth) or 1.5kg (sixteenth).

Oak
Smoked Cheddar
|
|
Oak Smoked Cheddar is a well-flavoured
mature Cheddar. At 12-15 months in age, it is selected to be
naturally smoked for 3-4 hours over oak shavings and sawdust. The
truckles are cut into 1.5kg (sixteenth) pieces prior to smoking as
this ensures the flavour will infuse throughout the cheese. No
artificial flavourings are added.
