Sizzling Vodka and Innkeepers Prawn

INGREDIENTS:

20 large raw prawns, shelled and de-veined
2 cloves of garlic, peeled and crushed
4 tablespoons Taffel Akavit
2 tablespoon olive oil
25g/1oz butter
1 sweet red pepper, deseeded, halved and thinly sliced
1 large red onion, peeled, halved and thinly sliced
2 large vine tomatoes
A pinch of cayenne pepper
A few drops of Tabasco sauce
A dash of Worcester sauce
125g/4 ˝oz Innkeepers Choice cheese, cut into very small cubes
Salt and black pepper to season
METHOD:
Marinate the prawns in Vodka and garlic. Cover and leave in a refrigerator overnight or at least a couple of hours.
Sauté the onions and peppers in the oil and butter until soft and beginning to brown. Remove from the pan and set aside.
Remove the prawns from the marinade and sauté for 1-2 minutes until they are pink in colour. Return the onion and peppers to the pan and add the tomatoes, cayenne, Tabasco and Worcester sauce.
Add the Innkeepers Choice cheese and stir over the heat for 1 minute to combine all the ingredients.
Sprinkle with freshly chopped chives and serve immediately.
