Sizzling Vodka and Innkeepers Prawn |

INGREDIENTS:
|
|
20 large raw prawns, shelled
and de-veined |
|
2 cloves of garlic, peeled and crushed |
|
4 tablespoons Taffel Akavit |
|
2 tablespoon olive oil |
|
25g/1oz butter |
|
1 sweet red pepper, deseeded, halved and
thinly sliced |
|
1 large red onion, peeled, halved and
thinly sliced |
|
2 large vine tomatoes |
|
A pinch of cayenne pepper |
|
A few drops of Tabasco sauce |
|
A dash of Worcester sauce |
|
125g/4 ˝oz Innkeepers Choice cheese,
cut into very small cubes |
|
Salt and black pepper to season |
|
|
|
METHOD:
|
|
Marinate the prawns in Vodka and garlic.
Cover and leave in a refrigerator overnight or at least a couple
of hours. |
|
Sauté the onions and peppers in the oil
and butter until soft and beginning to brown. Remove from the pan
and set aside. |
|
Remove the prawns from the marinade and
sauté for 1-2 minutes until they are pink in colour. Return the
onion and peppers to the pan and add the tomatoes, cayenne, Tabasco
and Worcester sauce. |
|
Add the Innkeepers Choice cheese and
stir over the heat for 1 minute to combine all the ingredients.
|
|
Sprinkle with freshly chopped chives and
serve immediately. |
