| Jalapeno
Pasta Gratin |

|
INGREDIENTS:
|
|
1 tbsp butter
|
|
1 onion, finely chopped
|
|
1 clove garlic, crushed
|
|
1 Jalapeno pepper, de-seeded &
finely chopped
|
|
¼ tsp ground cumin
|
|
1½lb fresh tomatoes, skinned,
de-seeded & finely chopped (or a 14oz can of chopped tomatoes)
|
|
1 cup milk
|
|
8oz small rigatoni or penne pasta
|
|
¼ tsp salt
|
|
fresh ground black pepper
|
|
a little water if necessary
|
|
2oz Red Dragon cheese, finely
diced or grated
|
|
|
|
METHOD:
|
|
Melt butter in a large pan and lightly
sauté onion, Jalapeno pepper and cumin for 1 minute to soften.
|
|
Add the tomatoes and milk. Bring to
the boil then add the pasta. Stir well and simmer for 2 minutes.
Season with salt and pepper.
|
|
Add a little water to cover the pasta.
Cover the pan and simmer, stirring occasionally until the pasta is
cooked (about 7 minutes)
|
|
Spoon pasta mixture into an ovenproof
dish and sprinkle the cheese on top. Then broil until the cheese
has melted. Serve immediately.

Serves 2-3 as a main course (6 as a
side dish)
