Blue Stilton Ice Cream

INGREDIENTS:

125g/5oz Blue Stilton, crumbled
180ml/6fl oz double cream
Finely chopped walnuts for garnish
METHOD:
Beat the Stilton and 75ml/ 2˝fl oz of the cream together. Whisk the remaining cream until stiff.
Using a metal spoon, carefully fold the whipped cream into the cheese mixture. Be very gentle and do not over mix. Freeze.
Serve topped with finely chopped walnuts.
